Beer-Battered Fried Shrimp `n Vegetables

Ingredients


1 pound unpeeled large fresh shrimp
2 small green tomatoes
1 zucchini, sliced
1 1/2 cups all-purpose flour
1 teaspoon cajun seasoning
1 (12 ounce) can beer
2 large eggs
1/2 pound small whole okra
1 (48 ounce) bottle Mazola Corn Oil

Directions


Peel shrimp and devein, if desired. Cut each tomato into 8 wedges, and cut zucchini into 1/4 thick slices. Whisk together flour, cajun seasoning, and beer; whisk in eggs. Dip shrimp and vegetables in batter. Pour oil in a Dutch over; heat to 350 degrees. Deep fry shrimp and okra in batches, 1 minute or until golden brown. Drain on paper towels, and keep warm. Deep fry tomatoes and zucchini in batches, 2 minutes or until golden brown. Sprinkle shrimp and vegetables with salt, if desired. Serve immediatly.
