1-3/4 cups sifted all purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/3 cup shortening
2/3 cup sugar
2 eggs, slightly beaten
1 cup ripe bananas, mashed
Preheat the oven to 350. In a medium bow, sift the dry ingredients together. In a large bowl, cream the shortening and peanut butter. Add the sugar gradually. Add the dry ingredients and mix until light and fluffy. Add the eggs and beat well. Stir in the dry ingredients alternately with bananas. Do not beat. Spoon into a greased 5 x 9 loaf pan. Bake for 50-60 minutes.
